Spiralized Sweet Potato

SWEET POTATO BOWL The best thing about spiralized sweet potato is that it’s one of the (if not the)  highest carbohydrate and calorie veggies that can be spiralized! Don’t run away thinking this is the epitome of a “fat veggie,” no, quite the opposite! Sweet potato is loaded with the carbs and cals that our bodies needs to function at best – especially if we are having an active day! In fact, I would even go as far as suggesting you spiralize sweet potatoes with zucchini noodles, just to add that extra calorie boost (or else you might get hungry…hangry!)

What You Can Expect

  • Short, thin noodles
  • Difficulties spiralizing.
  • Overcooks very quickly (gets mushy)
  • Sweet noodles
  • Higher carbs and cals (great energy source) than compared to zucchini noodles

  • Choose a sweet potato that is as straight as possible
  • Peel or leave skin on (skin = more nutrients)
  • Cut ends off
  • If necessary, cut  more off the end so that the diameter is at least 1″.  Anything smaller will “cut” the sweet potato rather than create  long spiralized noodles.
  • Recommended blade: 3mm or 6mm

  • Do not eat raw
  • Saute on medium heat for 8-10 minutes
  • Bake at 400 for 5-18 minutes
  • Boil for 2-3 minutes (Note: a lot of the nutrients and flavor escapes into the water, resulting in less strong a flavor of noodle)
  • Steam  for 3-4 minutes
  • Note: Steaming and boiling will cause the sweet potato noodles to fall apart very quickly! Between the two, I prefer to steam.
  • Best applications: noodle and rice dishes, soups, salads, sides

  • 1 medium-sized sweet potato=  approximately 1 cup raw spiralized sweet potato noodles
  • Varies with size of sweet potato

  • Store in an air-tight container
  • Keeps fresh for up to 5 days (may discolor slightly)
  • Mist with water to prevent sweet potatoes from drying out
  • Can be frozen

  • Wide range in prices dependent on size and store
